Flexible fruit slices – for dessert

The idea is I'd like to roll up the fruit slices with some filling inside (much like the cucumber rolls) but haven't found any fruit to make so flexible slices. Any suggestions?

    Melon is a bit like cucumber in texture and taste... maybe if you sliced it really thin?  Like a 'carpaccio' of melon wrapped around something... cantalope is fab with dairy (I'm thinking of it like an edible cottage cheese bowl) I bet some kind of dairy-based filling would taste good, cut off the rind and slice it super thin so you can wrap it around something else... of course the classic melon-proscuitto combo will do.

    I wonder if you soaked a particular fruit in, say, lemon juice, it would become more flexible (more saturated with fluid?) Maybe very thin slices of apple? You can get some pretty large "filets" from slicing an apple around the circumfrence (like you are peeling it, but take the peel off and then keep going for long thin "flexible" strips)

    Hope the suggestions help, or at least spawn some new ideas :)

    Thanks for a great idea! I totally forgot about melon and you're right it's texture is similar to the cucumber. Between melon and apple I'd go for the melon because I'd get more wide slices. I haven't thought about the filling yet...must put my thinking cap on Smile
